  Baked Oatmeal
This baked oatmeal will surprise you. It tastes good! Vary the fruits and milk and enjoy a healthy breakfast meal.

- 3 cups Rolled Oats
- 1/3 cup Shredded Coconut
- 1/3 dates, chopped
- 1/3 cup raisins
- 1/3 cup flaked almonds
- 1 tsp vanilla
- 2 cups soy milk
- 2 cups water
  Directions
- Lightly oil or spray a glass 9”x9” baking dish.
- Layer first five ingredients: oats, coconut, dates, and raisins, almonds
- Mix wet ingredients: soymilk, water and vanilla.
- Pour soy milk mixture evenly over the dry mixture in the baking dish.
- Cover dish and place in the refrigerator overnight.
- Bake uncovered at 350? for 45 minutes or until heated through. Serve hot with additional soy or nut milk.
- Prior to baking you can add fresh or frozen fruit: blueberries, peaches or strawberries, grated apple.
